Quick Chicken BiryaniSo for this biryani, you'll need
Chicken : 1 kg
Onion : 2 sliced
Ginger garlic paste : 1 tbsp
Salt : to taste
Red chili powder : 2 tbsp
Turmeric : 1/2 tsp
Coriander powder : 1 tsp
Peppercorn ( sabut black pepper) : 15-20
Clove (long) : 10-12
Bay leaf (taiz paat) : 1-2
Black cardamom : 2-3
Green Cardamom : 5
Cinnamon (dar cheni) : 2-3 sticks
Mace (jawatri) : 1-2
Green chilies : 8-9
Coriander : 1 bunch
Mint : 1 bunch
Zeera : 1 tsp
Saffron : few strands
Milk : 2-3 tbsp
Yogurt : 1/2 kg
Potatoes : 3
Tomato : 1 large
Clean and soak rice in water for 30 minutes
Than boil till they are half done. Drain and keep aside.
Fry onions till golden brown. Keep aside.
Half boil potatoes. Keep aside.
Marinate chicken with Mint, Coriander, Green Chilies, Ginger garlic paste,
Zeera, Peppercorn, Red chili powder, Salt, Turmeric, Coriander powder, Bay leaf, Mace, Cinnamon, Cloves, Green and Black cardamom, 3/4 of the fried onion, Yogurt and 2-3 tbsp of oil.Mix and leave for 10-15 minutes, or as long as you are prepping other stuff!
Mix saffron with warm milk. Leave for a few minutes to infuse color and flavor.
It didnt get the color i wanted...
..so i cheated and added a bit or yellow color :D
Now in a deep pateeli add a little oil, marinated chicken, Potatoes and tomato.
Add half boiled rice on top. Pour milk with saffron.
Sprinkle with fried onions, Coriander and mint. Cover tightly, so that no steam escapes.(i used a cloth on the underside of the lid)
Let it cook covered on medium heat for 30-35 minutes.
Dish out and serve !
